SOUS VIDE PORK RIBS

For the ribs

1 racks pork ribs

1 teaspoon Hungarian paprika

1 teaspoon honey

Salt and pepper

 

1. Fill and preheat the sous vide bath to 61.5C.

2. Mix the paprika, honey, salt, and pepper and rub the ribs

3. Put each rack into a cooking pouch and vacuum seal.

4. Submerge the pouch(es) in the water oven and cook for 48 hours.

Glaze

2 tablespoons vegetable oil

1 onion finely chopped

2 cloves chopped garlic

1 teaspoon (5 ml) black cumin

1 teaspoon Hungarian paprika

1 tablespoon tomato ketchup

Juice of 1 lemon

2 Tabasco® sauce

1 cup water

4 teaspoons soy sauce

2 teaspoons Worcestershire sauce

1 tablespoon sugar

black pepper

1. Stear the onion and garlic in a little olive oil

2. Add the remaining ingredients and cook over a low heat for an hour.

3. Remove from the heat and blend the sauce and reduce it

Finish

Cook in the hot oven for 20 minutes
